Philip Shaw Wines No. 19 Sauvignon Blanc draws from the Koomooloo Vineyard in Orange, home to ancient basalt soils over deep limestone. The fruit is harvested in the cool of the night.
The juice is coarse settled overnight at ambient temperatures and fermented on light solids. Both indigenous and selected yeasts are used. A small portion is fermented and aged in French oak barrels. The wine typically sees partial malolactic fermentation.
Light straw yellow, Philip Shaw Wines No. 19 Sauvignon Blanc has fresh citrus flavours, bright acidity and layered savoury complexity. Cellaring potential is three years.
